Vacuum distillation, which is divided into two stages:

• The first involves passing the wine through a distillation column and extracting the highly volatile compounds (the aromas) in a small alcoholic fraction at a temperature of 30°C.
• The second step is to run the wine through the column a second time to remove the alcohol. The aromatic fraction extracted during the first stage is then reinjected into the dealcoholised wine.
